Today is my Dad's Birthday, and I decided to make some yummy cookies to give him...he is a Cookie Monster! This is one of my favorites and reminds me of the Cherry-Chip cookies you get at the grocery store, except with an added bonus of the kiss on top. With all the yummy new flavors of chocolate kisses you could experiment and add your own little twist on top. I chose to use the Cherry Cordial Hershey Kisses for even more cherry goodness! I packaged them in a frosted take-out box lined with some stripy tissue paper and a layer of wax paper. They look tasty don't they?
I know these look a little like Valentine's Day treats, but really...you can't go wrong with chocolate, cherries and pink cookies. I suppose you could make them any color...that would be fun!
Cherry Cordial Chocolate Blossom Cookies
1 Cup Powdered Sugar
1 Cup Butter, Softened
3 Tsp. Maraschino Cherry Liquid
1/2 Tsp. Almond Extract
3-4 Drops Red Food Color
2 1/2 Cups All-Purpose Flour
1/2 Tsp. Salt
1/2 Cup Maraschino Cherries, Drained and Chopped
48 Chocolate Kisses in any flavor you desire!
In a large bowl, combine powdered sugar, butter, cherry liquid, almond extract and food color; mix well. Lightly spoon flour into a measuring cup; level off. Add flour and salt to batter; mix well.Stir in cherries. *At this point you can refrigerate the dough for 1 hour for easier handling, or continue on*. Shape dough into 1" balls. Place on an ungreased or lined cookie sheet. Bake at 350 for 10-12 minutes until edges are light golden brown. Immediately top each cookie with a chocolate kiss; press down firmly. Remove from cookie sheet and cool on a wire rack.
*To make it a little more fancy you could sprinkle with a little cocoa powder.
Package them up and give them to someone special, or treat yourself! Who wouldn't love getting this pretty package filled with cookies that were baked with hugs and "Kisses"?
