This weekend we are celebrating all of the May birthdays... we have 4! I have a lot of family of my side, and instead of celebrating each individual person's birthday and meeting 4-6 times a month we combine them into one giant party every month. Yes, we have at least 2-5 birthdays a month except 1 month out of the year! I am in charge of bringing a dessert, and so I chose to make a Banana Split "Cake". The recipe if from the new summer Kraft Food & Family Magazine. If you don't have it, quickly go and sign up for this wonderful FREE magazine, I love it! It has really simple recipes that are quick and great for kids too. You can also view past magazine archives recipes.
1 Cup Sugar, divided
1/3 Cup Butter, melted
2 Pkg. (8oz. each) Cream Cheese, softened
1 Can (200z.) Crushed Pineapple in juice, drained
6 Bananas, divided
2 Cups Cold Milk
2 Pkg. (4oz. each) Jell-o Instant Vanilla Pudding
2 Cups Cool Whip, thawed & divided
1 C. Nuts (Very Optional)
Step 1:
Mix graham crumbs, 1/4 cup of the sugar and the butter; press onto the bottom of a 13x9" pan. Freeze 10 minutes.
Step 2:
Beat cream cheese and remaining 3/4 cup sugar with a mixer until well blended. Spread carefully over crust. Lick bowl.
Slice 4 of the bananas; top with pineapple and sliced bananas. Eat a slice!
Step 3:
Pour milk into a large bowl. Add dry pudding mixes. Beat with a wire whisk for 2 minutes until well blended. Gently stir in 1 cup of Cool Whip, and spread over banana layer in pan. Lick bowl. Top with remaining 1 cup of Cool Whip; top with nuts. Refrigerate at least 5 hours.
Step 4:
Slice remaining 2 banana just before serving. Eat one more slice!
Chef Gordon Ramsey would be proud! He would say "Well done yew Bloody Donkay, now Piss Off", with a few more expletives... okay maybe not, but I can pretend!
So, there you have it...an easy no-bake dessert. I will let you know if it was a hit at the party and the tasty results next week.

I wasn't having a whole lot of luck with the green pom-pom fringe on the center pillow. I tried and tried, and it just wasn't to be. Oh well, I still think it turned out really cute, a little Mary Engelbreit-ish!
